[...] Venerdì 16 maggio si è svolta appunto una tale giornata. Luogo di destinazione la località Capoiale, dove ha sede l’Azienda di Caruso Tommaso, padre del convittore Fabio.

All’uscita da Scuola, ci aspetta il nostro Coordinatore, in veste di accompagnatore ufficiale. Sarà Ernesto Fiore, con il pulmino dell’Istituto, a condurci a destinazione. Il paesaggio che si presenta è veramente suggestivo. Questa località, in agro del comune di Cagnano Varano, si sviluppa in prossimità del molo di Capoiale, circondato da uno stupendo scenario marittimo, da un lato, e balneare dall'altro. Tutto intorno, tra una rigogliosa vegetazione di eucalipti e pini e un mare limpidissimo, si è sviluppato questo centro parte integrale del Parco Nazionale, uno dei luoghi più tranquilli in cui poter gustare, immersi nella natura, una vacanza in pieno relax. Infatti il porto, ma soprattutto i campeggi, gli alberghi e i villaggi turistici presenti ne fanno una vivace meta balneare. Fra le attività economiche più caratteristiche, la pesca, con particolare riferimento alla coltura di mitili.

[...] La località è un punto strategico per escursioni a carattere non solo naturalistico ma anche storico e religioso. A qualche chilometro, salendo verso Cagnano, si incontra l'ex idroscalo, una base militare costruita sotto il governo fascista. Il luogo è noto col nome San Nicola Imbuti.

Ancora più su, si incontra la Grotta e Santuario di San Michele che la tradizione vuole sia apparso qui per la prima volta, quindi anche prima dell' apparizione del 493 nella ben più famosa grotta di Monte Sant'Angelo: infatti si narra che San Michele vi si fermò per riposare e far bere il suo cavallo, lasciando le impronte della sua ala e dello zoccolo dell’animale vicino alla fonte, tuttora visibili.

Il Santuario richiama ancora oggi una moltitudine di pellegrini, attirati anche dalle virtù miracolose della cosiddetta “Pila di Santa Lucia”, una piccola cavità calcarea che raccoglie l’acqua generata dallo stillicidio della Grotta.
Tutto questo ed altro ci viene riferito dal signor Tommaso.

Si decide, in attesa del pranzo, di attuare la prima parte del programma, quella relativa alle escursioni sul territorio: ci addentriamo, guidati dal nostro amico Fabio e “sorvegliati” dall’istitutore Carugno, nella vasta pineta, poi scendiamo in spiaggia.

Successivamente esploriamo il molo costeggiato da imbarcazioni, in prevalenza pescherecci. Una banchina del molo è occupata da diversi punti vendita di prodotti ittici, in prevalenza cozze e vongole per le quali la località è rinomata produttrice.

Alle 14.00 ritornati in Azienda, ci accomodiamo in un’enorme sala, un tempo adibita alla ristorazione: la signora Caruso ci ha fatto trovare già approntati i tavoli sui quali spiccano piccole composizioni floreali. Appena seduti il personale del Convitto, si adopera per il pranzo che in buona parte era stato già preparato la mattina in Convitto.

Dopo pranzo noi convittori ci siamo concessi un momento di sano relax con giochi, chiacchierate e passeggiate nei dintorni dell’Azienda.

Alle 17.00, il proprietario Tommaso ci conduce nei campi per illustrarci la sua attività. L’azienda, come ha precisato subito, è ad indirizzo prevalentemente orticolo. In questo periodo è in atto la coltivazione del pomodoro. Le varietà coltivate sono il tondo per quanto riguarda la destinazione industriale, e il tondino per quanto riguarda il settore mensa.

Il signor Tommaso spiega che i lavori, per tale produzione, iniziano a fine estate con delle arature profonde, per poi terminare con lavorazioni di rifinitura nei mesi autunnali.

La coltura viene impiantata dalla fine di Aprile alla metà di Maggio. Le piantine vengono collocate ad una distanza di 40 cm. l’una dall’altra, per far sì che non ci siano accavallamenti di radici.

Ci accompagna, poi, nel locale adibito alla conservazione dei prodotti per l’agricoltura: qui ci informa che la concimazione viene effettuata prima del trapianto, con concimi contenenti microelementi (Azoto – Fosforo - Potassio). Accennando alle principali avversità che, in genere, colpiscono questa coltura, afferma che esse sono notevoli, tra queste, quelle legate ai funghi terricoli, che attaccano le radici e il colletto, la peronospora, che colpisce le foglie, il fusto e i frutti. Da ricordare anche il famoso “ragnetto rosso” che causa addirittura il disseccamento della pianta.

Per quanto riguarda l’irrigazione, l’Azienda adotta un sistema “a goccia”.

Alla fine un gruppo di convittori, in particolare quelli che già conoscono e praticano questa specifica coltivazione, si attarda con il signor Tommaso rivolgendogli altre domande e confrontandosi su diverse tematiche.

Alle 19.30 dopo aver salutato e ringraziato il papà e la mamma di Fabio per la loro disponibilità e squisita ospitalità, saliamo sul pulmino, pronti per rientrare alla base. Durante il viaggio di ritorno, siamo tutti euforici: una gioia che scaturisce dall’aver vissuto una giornata piacevole e interessante sotto tutti gli aspetti, perchè, forse è banale dirlo, ma il tempo vola quando si fanno cose piacevoli e si sta in buona compagnia.
